Apple Gingerbread cake with Cinnamon Icing by Women's Institute
Ingredients
- 1 large cooking apple and cloves to taste
- 2 tsp sugar
- 3 tbsp water
- 6 oz self raising flour
- 2 tsp ground ginger
- 3 oz sugar
- 1 egg
- 4 oz black treacle
- 3 oz melted butter
Instructions
Step 1
Peel, core and slice apples.
Step 2
Cook in water, sugar and cloves until soft.
Step 3
Put the flour and ginger into a bowl and stir in the sugar.
Step 4
Add the beaten egg, apple, treacle and butter. Beat together well.
Step 5
Place in a greased and lined 7" tin. Bake at 180℃ / gas 4 / 350℉ for 40 minutes.
Step 6
This cake can be iced if desired - 1oz butter, 2 oz treacle, 2oz icing sugar, pinch of cinnamon. Mix together and spread on cake.
